As a adverb anything is in any way, any extent or any degree. As a noun anything is someone or something of importance. The meaning of 'everything in between' can be described as there being two extremes, and everything that fits between those two things is the everything in between.

‘Everything’ is used to refer to all things that exist including all that have physical bodies and those that are abstract objects while ‘anything’ is used to refer to any of the things. As a non-native speaker, when I read the books about grammar, I learn that usually the word "everything" is used in a positive sentence and that the word "anything"is used in a negative or interrogative sentence.

But I often see sentences in some magazines and articles like: We'll do almost anything for our beloved animals. The distinction between “Find anything again” and “Find everything again” is not one of connotation but of denotation. It's the difference is between finding one thing and finding all things (or as defined: "all that exists; all that relates to the subject").
